Venison Burgoo

After a long hunting expedition, nothing could be better than a big bowl of hearty burgoo. This Kentucky classic is full of good meat and vegetables. Whether you hunt in the great outdoors, the grocery store, or through the leftovers in your fridge, burgoo is satisfying catch-all dish that won't let you down!

For the Burgoo

Ingredients

4 oz Venison
4 oz Smoked Bacon
4 oz Smoked Pork
4 oz Smoked Duck
1 Large Onion-small diced
1 TBS Garlic-minced
1 Cup Carrot- small diced
1 Cup of Corn
1 Cup of Edamame (soy beans)
1 Large Tomato or a jar of home grown canned tomatoes
4 Cups of Beef stock
1/4 Cup Olive Oil

Directions

Add 1/4 cup of olive oil to a large stock pot, over medium-high heat cook both sides of meat until browned. Add all vegetables to the pan as well as the beef broth and let simmer on low heat for as long as possible. The longer the better for tenderizing the meat and incorporating the flavors.

For the Corn Meal Dumplings

Ingredients

1 Cup of Flour
1 Cup of Cornmeal
1 TBS Sugar
1 Tsp Salt
1 Tsp Baking powder
1 Cup of Beef broth

Directions

Combine all dry ingredients in a bowl, slowly stir in beef broth until a sticky dough forms. Drop by spoonfuls into Burgoo to cook.
