Mint Julep Chocolate Truffles

Chocolate lovers rejoice! Chef Jeremy is sharing his recipe for quick and easy chocolate truffles infused with the flavor of mint julep. These delightful confections make a great gift for Valentine's, anniversaries, birthdays, or just Mondays.


1 pound of your favorite chocolate (Dark, semi-sweet, white, milk-chocolate, whatever you like)
3/4 cup of cream
1 tsp bourbon barrel aged vanilla extract
1/4 cup of bourbon
3/4 cup of cocoa powder
1 cup of sugar
1/4 cup crystallized mint


Melt chocolate in a double boiler while stirring in the cream and vanilla. Once chocolate is fully melted and combined with the cream, remove from the heat and stir in the bourbon. Place chocolate mixture in the freezer for about 30 minutes or until the chocolate has firmed to a scoopable consistency. In a large bowl, combine cocoa powder, sugar. and crystallized mint. When the chocolate is ready, remove from the freezer and use a 1 ounce scoop to make balls or use a regular kitchen spoon (about 2 tablespoons) to scoop out chocolate and roll into balls with your hands. Roll the balls of chocolate in the the cocoa powder, sugar, and mint mixture until well coated and shake off any excess.

Optional: Wrap your truffles in miniature baking cups and place in a gift box or tin to give to someone special.

Kid version: Leave out the 1/4 cup of bourbon and use 1 full cup of cream instead of 3/4 cup.


*If you're unable to find crystallized mint, you can substitute with mint extract. Just add a drop or two to the melted chocolate before placing in the freezer
