On this episode of Food News and Chews, we go inside Bourbon Barrel Foods in Louisville, Kentucky with owner and founder Matt Jamie to see how they're making soy sauce and infusing it with bourbon flavor and Chef Jeremy uses nearly every Bourbon Barrel Foods product to make this beautiful duck breast and Asian noodle salad dish. Bourbon Barrel Foods, founded in 2006, is the only soy sauce microbrewery in the United States. Their signature Bluegrass Soy Sauce is made with Kentucky grown non-GMO soybeans, soft red winter wheat, and limestone filtered Kentucky water. Unlike other soy sauces, this soy sauce is aged for a year in re-purposed bourbon barrels.
